Ingredients
- quinoa — 150 g (red, white and black mixed in the source)
- vegetable stock — 200 ml
- onion — 15 g (chopped)
- green chilli — 5 g (chopped)
- black mustard seeds — 1/2 tsp
- turmeric powder — 1/2 tsp
- almonds — 5 g
- cashew nuts — 5 g
- raisins — 5 g
- curry leaves — 6-8
- parsley — 5 g (chopped)
- chives — 5 g (chopped)
- olive oil — 10 ml
- lemon — 1 (juice)
- salt and pepper (to taste)
Method
- Bring the vegetable stock to a boil, take it off the heat and add the quinoa. Cover tightly and leave for 15-20 minutes, until the quinoa is soft.
- Heat the oil on high heat and add the mustard seeds. When they start to pop, add the turmeric, onion, green chilli, raisins, cashews, almonds and curry leaves.
- Lower the heat and saute until the onion is translucent and the cashews are lightly browned.
- Add the softened quinoa and mix it thoroughly with the spices.
- Season with salt, pepper and lemon juice and scatter over the parsley and chives.
Tips
- From the same book (p. 27 PDF): rinsing quinoa under cold water while rubbing it gently removes leftover bitterness.
