Make

Ingredients

  • apples — 6 (medium, about 1 kg)
  • apple juice — 1 cup (250 ml)
  • vanilla extract — 1 tsp (or 1 vanilla pod; for the filling)
  • ground cinnamon — 1/4 tsp (for the filling)
  • orange — 1/2 (juice only)
  • quinoa flakes — 1 1/2 cups (120 g; for the crumble)
  • coconut flakes — 1/2 cup (50 g)
  • ground cinnamon — 1/2 tsp (for the crumble)
  • vanilla extract — 1 tsp (or 1 vanilla pod; for the crumble)
  • maple syrup — 3 tbsp
  • macadamia nut oil or coconut oil — 3 tbsp
  • walnuts or macadamia nuts — 1/2 cup (50 g; optional)

Method

  1. Wash the apples, take out the cores and cut them into wedges, leaving the skin on.
  2. Put them in a large heavy-based pan, pour in the apple juice and orange juice, and add the vanilla and cinnamon.
  3. Cook over medium-low heat for 20-30 minutes, stirring now and then, until the apples are very soft. Keep the lid on for the first 10 minutes so the fruit gives up its juice, and leave it off for the last 10 minutes if there is too much liquid.
  4. For the crumble, pulse the quinoa flakes with the maple syrup, oil, coconut, nuts, vanilla and cinnamon in a food processor for a few seconds, just until crumbly. Taste and adjust.
  5. Heat the oven to 160 °C. Spoon the apples into a baking dish of a suitable size and cover them with the crumble.
  6. Bake for 30 minutes, until golden brown. Serve on its own or with yoghurt or coconut cream.
