Prep 40 min · Cook 20 min · Servings not given in the source
Make
Ingredients
- proso millet rava — 100 g
- refined wheat flour (maida) — 100 g
- ghee (or vegetable fat) — 20 g
- powdered sugar — 80 g
- milk — 150 ml
- salt — 2 g
- oil (for deep frying)
Method
- Combine the proso millet rava, maida, salt and powdered sugar in a mixing bowl.
- Heat the ghee until hot, pour it over the dry mixture and rub it through with your fingertips.
- Pour in the milk a little at a time and knead to a soft, pliable dough; no water goes in.
- Divide the dough into four and roll each piece out about 1/3 inch thick.
- Cut into small diamonds with a knife or cutter, lift them off with a spatula and leave them on a dry cloth for 20 minutes.
- Deep fry on a low flame until light golden. Cool completely and store in clean, dry jars.
Water and timing
Water: none. IIMR's Hindi printing of this same recipe mixes the powdered sugar into the flour, adds the ghee hot and kneads the dough with the listed 150 ml milk, so no sugar-ghee water is boiled.
