Make

Ingredients

  • proso millet — 1/2 cup
  • water — 1 1/2 - 2 cups (for pressure cooking, as the source's method gives (its list prints 1 1/2 - 2 1/2 cups))
  • milk — 1 cup
  • sweetener of your choice — 2 tbsp
  • cardamom powder or cinnamon powder — 1/4 tbsp
  • nuts and fruits of your choice (optional)

Method

  1. Toast the proso millet in a dry pot over low heat, stirring, until it turns pale gold and a few grains start to pop. Tip it onto a plate to cool for a few minutes.
  2. Grind half of the toasted millet to a coarse powder; keep the rest whole.
  3. Bring 1 1/2 to 2 cups of water to a boil in a pressure cooker and add all the millet. Lock the lid, turn the heat down and cook for about 4 minutes, then switch off and let the pressure fall on its own before opening.
  4. Pour in the milk and simmer, stirring often, until the grains are fully soft and the dalia is creamy.
  5. Take it off the heat and stir in the sweetener with the cardamom or cinnamon. Top with nuts and fruit if you like.

Water and timing

Water: 1 1/2 to 2 cups for 1/2 cup of proso millet, pressure-cooked, the amount the method in the FSSAI book uses (its ingredient list prints a wider 1 1/2 to 2 1/2 cups).
