Ingredients
- kodo millet poha (flakes) — 100 g
- red chilli powder — 1 tsp
- turmeric powder — 1/2 tsp
- ajwain — 1/2 tsp
- garam masala — 1/4 tsp
- amchur powder — 1/2 tsp
- salt (to taste)
- corn flour — 20 g (made into a slurry for coating)
- wheat bread crumbs — 40 g
- oil (for frying; named in the method)
Method
- Rinse the kodo millet flakes in water, then wrap them in a muslin cloth and squeeze out the extra water.
- Mix the flakes with the chilli powder, turmeric, ajwain, garam masala, amchur and salt.
- Roll the mixture into lemon-sized balls and press each one gently with your palm into a flat tikki.
- Dip the tikkis in the corn flour slurry and then roll them in the bread crumbs.
- Fry them in hot oil, turning once, until both sides are crisp. Serve with tomato sauce or mint chutney.
Tips
- General practice: make the corn flour slurry with just enough water to give a thin coating batter.
