Ingredients:

  • 1 cup Ishva Little Millet
  • 2 cups water
  • Assorted vegetables (peas, carrots, bell peppers, etc.)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • 1 cinnamon stick
  • 2-3 cloves
  • 2-3 green cardamom pods
  • Salt and pepper to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Rinse the Little Millet thoroughly and soak in water for 30 minutes. Drain and set aside.

  2. In a large pan, heat oil or ghee over medium heat. Add the cumin seeds, cinnamon stick, cloves, and cardamom pods. Sauté until fragrant.

  3. Add the chopped onion, garlic, and ginger. Sauté until the onions turn translucent.

  4. Add the assorted vegetables and cook for a few minutes until they start to soften.

  5. Add the drained Little Millet and sauté for another 2-3 minutes.

  6. Pour in 2 cups of water, add salt and pepper to taste, and bring to a boil.

  7. Reduce the heat, cover, and simmer for about 20-25 minutes or until the millet is cooked and the water is absorbed.

  8. Fluff the pulao with a fork, garnish with fresh coriander leaves, and serve hot.
