To prepare Ishva Foxtail Millet Pongal, gather the following ingredients:

  • Ishva Foxtail Millet: 1 cup
  • Yellow Moong Dal: 1/2 cup
  • Water: 4 cups
  • Ghee: 2 tablespoons
  • Cumin Seeds: 1 teaspoon
  • Whole Black Peppercorns: 1 teaspoon
  • Cashew Nuts: 2 tablespoons, broken into pieces
  • Ginger: 1-inch piece, finely chopped
  • Green Chilies: 2, slit lengthwise
  • Curry Leaves: A few leaves
  • Asafoetida (Hing): A pinch
  • Turmeric Powder: 1/2 teaspoon
  • Salt: To taste
  • Fresh Coriander Leaves: For garnish


Step 1: Preparation

  1. Rinse and Soak: Rinse the foxtail millet and yellow moong dal together under running water. Soak them in enough water for about 30 minutes. Drain before using.

Step 2: Cooking

  1. Pressure Cook: In a pressure cooker, heat ghee over medium heat. Add cumin seeds and whole black peppercorns. Let them splutter.

  2. Add Cashews: Add broken cashew nuts and sauté until they turn golden brown.

  3. Aromatics: Add chopped ginger, slit green chilies, and curry leaves. Sauté for a minute until fragrant.

  4. Add Dal and Millet: Add the drained foxtail millet and moong dal to the cooker. Stir well to coat with the tempering.

  5. Seasoning: Add a pinch of asafoetida, turmeric powder, and salt to taste. Mix everything together.

  6. Cook: Pour in 4 cups of water and mix well. Close the lid of the pressure cooker and cook on medium heat for 3-4 whistles or until the millet and dal are cooked through and soft.

Step 3: Serving

  1. Tempering (Optional): Heat a small pan with a teaspoon of ghee. Add mustard seeds and let them splutter. Pour this tempering over the cooked pongal for added flavor.

  2. Mix and Garnish: Open the pressure cooker once the pressure releases naturally. Mix the pongal gently. Garnish with fresh coriander leaves.
