  • 1/2 cup Ishva Kodo Millet
  • 4 cups milk (whole milk preferred)

  • Ghee (clarified butter) for frying nuts (optional)


  1. Preparation:

    • Rinse the Ishva Kodo Millet thoroughly under running water. Soak it in water for about 30 minutes.
  2. Cooking Kodo Millet:

    • In a pressure cooker or a pot, add the soaked kodo millet and 1 cup of water. Cook until millet becomes soft and cooked through. It usually takes about 10-15 minutes in a pressure cooker or 20-25 minutes in a pot. Once cooked, set it aside.
  3. Preparing the Kheer:

    • In a heavy-bottomed pan, bring the milk to a boil over medium heat, stirring occasionally to prevent burning.

    • Once the milk starts boiling, reduce the heat to low and let it simmer. Stir occasionally and let the milk reduce to about three-fourths of its original quantity. This process usually takes about 20-25 minutes.

  4. Adding Millet and Flavoring:

    • Once the milk has reduced, add the cooked kodo millet and mix well. Let it simmer for another 5-10 minutes until the kheer thickens to the desired consistency.

    • Add sugar and stir until it dissolves completely. Adjust sweetness according to your taste.

    • Add cardamom powder and mix well. This adds a delightful aroma to the kheer.

  5. Garnishing:

    • In a small pan, heat a teaspoon of ghee and roast the chopped nuts until they turn golden brown. Add these roasted nuts to the kheer and mix gently.
